Easy Miracle Noodle Spaghetti
Ingredients:
  • 1/2 lb. lean ground beef, or ground turkey
  • 1 small onion, chopped
  • 2 cloves of garlic, minced
  • 1 1/2 cups of water
  • 1 6oz. can of tomato paste
  • 1 packet of Stevia
  • 1/2 tsp. basil
  • 1/4 tsp. salt
  • 1/8 tsp. oregano
  • pinch of black pepper
  • 1 package of Miracle Noodles Angel Hair

Instructions:

Saute meat until cooked; drain off fat. Add chopped onion and minced garlic; saute 2-3 minutes. While your doing this, drain and rinse Miracle Noodles; set aside. Stir in all remaining ingredients into meat mixture. Cover pan and let simmer for 10 minutes; add Miracle Noodles and let simmer for another 10 minutes, stirring occasionally. Uncover and let simmer until you are satisfied with sauce thickness. :) Enjoy!!!
Makes 2 servings
This is an approved Phase 2 VLC (very low calorie) food. When you add Parmesan cheese it becomes a maintenance food.

Mock Potato Casserole
Ingredients:
  • 16oz bag of frozen cauliflower
  • 2 tbsp. I can't Believe its Not Butter
  • 4 oz (half a package) of low fat cream cheese
  • 1 lb bacon, cooked crispy and crumbled ( turkey bacon is best but not necessary)
  • 8 oz shredded sharp cheddar cheese
  • 2 tbsp. chopped green onions
  • 2 tbsp. water
Instructions:

Microwave cauliflower w/2 tbsp. water for 10-15 minutes; until very soft. Drain, then mash with a potato masher.
( If you have a food processor, I mix all the ingredients that way)
Blend in butter and cream cheese. Add most of the sharp cheese saving out 1/2 cup for the topping. Stir in bacon and green onions. Put in casserole dish and top with remaining sharp cheese.
Bake at 350 for 20 minutes until browned and bubbly!
Makes 8 servings.  
This is a wonderful dish that can be eaten as a side for a couple days. :)



Cauliflower Crust Pizza

Ingredients:

  • 1 cups cooked cauliflower
  • 1 egg
  • 1 cop mozzarella
  • 1/2 tsp fennel
  • 1 tsp oregano
  • 2 tsp parsley
  • 100% natural pizza sauce (preferably with no sugar or syrup)
  • Cooked meat toppings of your choice
  • Mozzarella for topping
Instructions:
Preheat oven to 450 degrees. Spray cookie sheet with non-stick spray. In a medium bowl combine cauliflower, egg and mozzarella. Press evenly on the pan. Sprinkle evenly with fennel, oregano, and parsley. Bake at 450 degrees for 12-15 minutes. ( 15-20 minutes if you double the recipe). Remove pan from the oven. To the crust, add sauce, toppings, and cheese. Place back in oven, (Or broiler), until cheese is nice and melted. :)
     
    Apple Cinnamon Muffins
     
     
    Ingredients:
1 cup of flax meal
  • 1 cup of almond meal
  • 1 tablespoon of black sesame seed (optional)
  • 1 tablespoon of baking powder
  • 1/4 teaspoon of salt
  • 1 and 1/4 teaspoons of nutmeg
  • 1 teaspoon of sugar free vanilla extract
  • 1 teaspoon of cinnamon
  • 1 teaspoon of orange zest (optional)
  • 1 cup equivalent of artificial sweetener
  • 1/2 cup of butter, melted
  • 4 eggs, beaten
  • 1/3 cup of almond milk (can substitute water)
  • 1 small apple, diced

  • Directions
        1. Preheat oven to 350F (175C).
        2. Grease muffin/cupcake pan with coconut oil or butter (ignore this step if you use muffin cups).
        3. Mix ingredients together and whisk well.
        4. Fill each muffin/cupcake cup to around 3/4 of the way.
        5. Bake for 20 minutes and cool before removing.
